Il Conventino - TUSCANY

The farm Il Conventino is a Nobile di Montepulciano wine consortium member that has been one of the first producers in that area to obtain biological high-quality grapes. A strict pruning, the good exposure of the vineyards, an ideal microclimate, the choice of time for harvesting and an accurate grapes selection have given the opportunity to obtain a scented Nobile di Montepulciano, which results round and well-balanced at tasting. It is a high-quality structured wine, typical from this vine-growing area of Tuscany. Il Conventino summarizes its native land, taste, flavours, colours and culture. It comes out of great grapes and from men who know the way to cultivate and treat them.  This is why their vineyards never produce more than 60 quintals per hectare (with a real 70% yield), then the Il Conventino Nobile di Montepulciano wine ages for at least two years in oak barrels (three years for Reserve). After fermenting in steel tanks the wine is poured into new, large oak barrels of 5000 litres where it ages for 2 years at least. After aging, the wine is siphoned back into steel vats, filtered and then bottled. It rests in the bottle for at least 3 months before being marketed.
