Grown on a single vineyard of great microdiversity whose soil is rich and complex, it is followed by 12 days of fermentation using battonage on its lees until it reaches fizziness. It is treated to Charmat method for 30 days, and fined in bottle. Residual sugar is only 6g/L. Subtle, complex aromas of white flowers, citrus, moss and white fruit are followed on the tongue by delicate white fruit sustained by balanced acidity. Certified Organic.
